The Michelin manual will not have to clarify why it demoted a restaurant’s ranking in its prestigious guide, according to a courtroom ruling. The chef at the restaurant in concern, Maison de Bois, had accused Michelin of incorrectly accusing him of utilizing English cheddar cheese in a soufflé, which he vehemently denied.
A Paris court decided that Michelin will not have to reveal the specifics behind their choice to demote Marc Veyrat’s restaurant’s star rating.

A Paris courtroom created the ruling early on Tuesday, the Independent stories. Marc Veyrat had sued Michelin right after they reduced the position on his restaurant from 3 stars to two.

In September, Veyrat claimed that a Michelin inspector accused him of making use of English Cheddar in a French soufflé, rather of a common French cheese solution, the New York Post reported. Richard Malka, the law firm representing the Michelin Manual, spoke about the ruling, stating, “This determination enshrines the independence to criticize and enshrines the fact that his grievances were imaginary and unfounded,” KFGO experiences.
